(Acanth spinach) Tastes like mushrooms! This is a traditional favourite in Papua and New Guinea, and its fresh leaves and shoots really do taste and smell like mushrooms. The fresh greens are delicious raw or cooked. Australians love to throw the fresh leaves in tossed salads and sandwiches, and in stir fries, stews and soups (added at the last minute to preserve flavour). For those suffering from candida and thrush, this herb is a nice alternative to mushrooms. Mushroom herb is tropical, but it does well in temperate gardens. The first harvest is ready in 60-90 days. Prefers part shade but will grow in full sun.
