Fresh Herbs with Avocado; Mango Vitamins

It appears the summary of your recipes indicates the herbs you use to cook with will open up the flavor in foods. Do you have avocado recipes? Also, I love mangoes, what source of vitamins are they?

You are correct, adding fresh herbs to foods enhances the flavour and enjoyment of foods. I do not have a specific recipe using avocado but the herbs that go well with it include chives, cilantro, dill and marjoram. It sometimes depends what you are pairing with the avocado which herb best suites. Try a salsa of diced avocado, sweet red pepper (and hot peppers, if desired), sweet onion and cilantro to use with tortilla chips or as a side to grilled chicken or fish, or with eggs. If you want to fill avocado with baby shrimp, try a dressing of mayonnaise, sour cream, dill and a squeeze of lime juice. Try a salad of Boston lettuce topped with sliced avocado, orange or grapefruit sections, snipped chives and a dill or tarragon vinaigrette. Avocado would also be nice with Herbes de Provence (chervil, chives, tarragon and parsley). In my cookbook, "Thyme in the Kitchen -- Cooking With Fresh Herbs" (available from Richters) I have a chart of vegetables and the herbs that go well with them.
